INGREDIENTS
2 slices whole wheat or multigrain
bread
¼ cup feta cheese, crumbled
1 small cucumber, thinly sliced
1 small tomato, thinly sliced
Black pepper to taste
Dried oregano or mixed herbs
(optional)
Olive oil or butter (very little,
optional)
STEPS
Lightly toast the bread slices if preferred. In a bowl, crumble the feta cheese and season with black pepper and herbs. Spread the seasoned feta evenly on one slice of bread. Layer cucumber and tomato slices on top. Cover with the second bread slice. Cut into halves and serve fresh.
